Acrylic is easy to maintain and inexpensive place, but not a fire hazard.

Natural fibers are softer for baby's skin - cotton, wool ... or for the more extravagant, like a mixture of silk and cashmere? Or something less "waste", a bamboo / cotton? They feel divinely sweet!

In fact, cotton or wool is best for babies / children because of the danger of fire. Acrylic and synthetic fibers tend to melt in a fire and can adhere to the skin. Thus pajamas and sleepers for babies in special fabrics that are to be made flame retardant. Good luck in your search.

Acrylic yarn is easy care wash and dry, and products that'll make you disappear not worry. The fibers are usually mild and relatively inexpensive compared to wool or other "organic" cotton.

I would say that the cotton. It's become very soft and wool tend to be scratched. If the itchy wool adults, imagine how uncomfortable with a baby.
